I know it's winter, but before the snow that came this week I was having mad summer vibes. Not to mention I had 2 angry avocados festering in my fridge that were just DYING to be made into guac!
I've made my favourite version of guac a few times, which includes tomatoes, corn and absolutely no cilantro...nope...can't do it...but tomatoes are out of season and taste like mush this time of year, so I used other things that I already had on hand and were more fresh.
With that, I present, my newest version of guacamole that I devoured in one day. I had some with lunch one day, and then for lunch the next! That's the beauty of this dish. It doubles as a meal, because of all the fibre, healthy fat and vitamins in the core ingredient - the ever-giving avocado.

One thing to note about this recipe is that I free-handed it, although the measurements I listed here are pretty close to what I included. That being said, there is a lot of freedom in creating this recipe. For instance, I really like a limey guac, so I added extra juice. I also love cumin, so I would probably add more than I listed, but listed a moderate amount, in case you're not as big a fan. Basically, consider your portions before starting.
GUACAMOLE 2.0

INGREDIENTS
2 avocados, ripened
1/4 sweet onion, medium
1/4 yellow bell pepper, medium to large
1/2 jalapeño, small to medium
1t cumin powder
1/2t garlic powder
1/2t paprika
1/4C parsley, compressed
1-2 limes, medium, juiced (2-4T)
INSTRUCTIONS
1. Cut avocados in half, remove the pit and scoop or squeeze the flesh from the skin and place it into a medium to large bowl. Mash until all large chunks are gone. Leave small chunks, or keep mashing until smooth - whatever you prefer.
2. Dice the onions, bell pepper and jalapeño (your choice to include the seeds) and add to the mashed avocado.
3. Toss in measured spices, herbs and lime juice. Mix all ingredients with a spatula until consistent.
4. Eat with your choice of organic corn chips, slathered on some baked chicken, on top of a meat or veggie burger or with a spoon. Yup. Enjoy!
