RECIPE: Simple Vegetable Broth

Ingredients
2 medium onions
5 large cloves garlic
4 cups vegetable scraps (see notes)
8-9 cups filtered water
2 strips kombu
1tsp Himalayan pink salt or sea salt
1/2tsp ground black pepper
2tsp tamari (to finish)
Instructions
Place all ingredients into a large pot, cover, and bring water to a boil (this will take at least 15 minutes).
Once boiled, reduce to simmer for 30 minutes, keeping lid on.
Remove from heat and let sit for 5 minutes to cool a bit. Add tamari at this time. Strain and use immediately in soup, sip by itself, or let cool completely, jar, and refrigerate.
NOTES
Vegetable scraps can include brassica stems (cauliflower, broccoli, cabbage, kale), root tips (carrots, parsnips, turnip, onion), and other food scraps (pepper tops, leek ends, etc.).
You’ll want to keep a Ziploc bag full of food scraps in the freezer until you’re ready. One full large bag is enough to make this batch of broth, plus the remaining ingredients.
