Stacked Summer Salad

RECIPE: Stacked Summer Salad

Servings: 1
Time: 10 minutes + hard-boiling and dressing prep
Taste: Sweet & Savoury
Action: Brain-boosting & Satiating

INGREDIENTS

3/4C arugula, packed
1T sunflower seeds
1/4 large carrot, shaved or julienned
1/4C chopped red onion
1/2C chopped red pepper
hard-boiled egg (make night prior)
1/2 medium avocado
1/2C cooked white beans
1/4C maple balsamic dressing (make night prior)

INSTRUCTIONS

1. Pour dressing into the bottom of a 750mL mason jar.
2. Layer ingredients by weight (i.e. in reverse order seen above).
3. Cap with a lid and refrigerate until ready to eat.
4. When ready to eat, gently shake contents to cover salad with dressing.
5. Remove lid and eat!
